Salted Honey Cardamom Cookies

These cookies are one of my all time favourites. They check all the boxes; sweet, salty, lightly spiced and deliciously chewy. Developing this recipe was just as much a treat as it was to eat them!

Ingredients:

  • 220g unsalted butter, softened

  • 300g granulated sugar

  • 60g honey

  • 2 large eggs

  • 5ml pure vanilla extract

  • 430g all-purpose flour

  • 4g ground cardamom

  • 2g baking soda

  • 2g baking powder

  • 4g salt

Instructions:

Preheat oven to 350°F

  • Cream the butter and sugar together until light and fluffy

  • With the mixer on medium, add eggs one at a time, as well as the honey and vanilla. Scrape down the sides of the bowl to make sure everything is mixed evenly

  • Add all dry ingredients, and mix on a low speed, until everything is incorporated. Make sure not to over mix.

  • Scoop cookie dough into even balls, and let chill in the fridge for a minimum of 30min before baking

  • Bake for 8-10min until lightly golden

  • While cookies are still hot, sprinkle with a small amount of flaky salt (optional, but highly recommended!)

  • This dough also freezes really well! Scoop out your dough balls and place them on a cookie sheet. Place them in the freezer until completely frozen, then put into a freezer bag or tightly sealed plastic container. When you’re ready to eat them, bake as usual. No need to let them thaw out!
